philippine lechon, Filipino version
Lechon or roasted pig (suckling pig is de letse) is the star of all viands in every occasion celebrated in the Philippines.
Historians said, even before Cebu City (oldest city in the Philippines that is also metropolitan in appearance) was elevated in Time Magazine's Best of Asia in 2009 for its roasted pig, the Filipinos, particularly Cebuanos already knew how to cook lechon to perfection.
In fact, it was given to Spaniards in 1521 as a welcome gift.
Anthony Bourdain, an American author and celebrity chef called the Philippine lechon as "best pork ever."
Aside from Cebu, Batangas is another popular location that markets roasted pig. In its first class municipality Balayan, the Batangueños here held roasted pig parade annually every June 24 to celebrate feast of Saint John the Baptist.
The finding of this scrumptious and mouth-watering food extends to a district in Quezon City known as La Loma, often deemed as "lechon capital of the Philippines."
Moving North, Bulacan also has its own lechon to be proud of since animal husbandry is widely practiced as source of living.
